Quinoa is used to prepare quinottos (risottos), salads, soups, desserts and smoothies. It is a versatile food as it can substitute almost every grain used in various dishes. Prior to cooking, it needs to be thoroughly washed using a colander and rinsed several times with hot water to remove any saponins.
