Bulgur is parboiled, dried and coarsely ground durum wheat. It is prepared in a way that allows it to retain most of its nutritional substances. It can be used as a substitute for rice and other kinds of porridges. Instead of cooking it, bulgur can be prepared by pouring hot water over it and covering it with a lid for 30 minutes.
